Ice cream contains 10 percent or more of milk fat, and this should be fulfilled in order for the product to be labeled ice cream. One of the main product ingredients in ice cream is actually air, although sweeteners make up additional 12 to 16 percent of the ingredients in the product. A product containing less than 10 percent of the milk fat is called ice milk, although this is a product much like ice cream. This product is cheaper aside from being lower in milk fat, such that this product is labeled as low fat ice cream. Ice milk and ice cream have about the same amounts of sugar or sweeteners though.

A product containing less milk fat compared to ice cream but containing more sugar or sweetener than ice milk or ice cream is sherbet, a product that is also a frozen treat. A frozen dessert product from frozen fruit juice or sweetened fruit puree is called sorbet, and this is also a frozen treat you can find in your local ice cream stores. For those who do not eat dairy products, this can be a nice alternate, although this is not truly ice cream.

Frozen custard is also a nice alternative for ice cream, and this is also an interesting frozen treat that is similar to ice cream. This product contains eggs in addition to containing also cream and sugar just as you would find in ice cream. The product is denser compared to ice cream and tastes somewhat different. This is a product found to have improved texture and also found to stay cold longer, and the eggs are what make these alterations, as discovered by two ice cream vendors in Coney Island who invented this product in the early 20th Century.

A product that is a favorite in Italy for long is gelato, and this is also a product loved by Americans. In Italian, gelato is the actual word for ice cream and is also similar to American ice cream, but this is a product with less air. Egg yolks are sometimes added, making the product more of custard that is frozen and there are versions such as zabaione, a gelato-type product containing sweet wine.
