PROFITEROLES SALTED HERRING SMOKED FRESH GOAT AND APPLE GRANNY SMITH



An absolutely unusual but surprisingly tasty way to use the preparation classic choux pastry. Ideal for an innovative and delicious appetizer. 

Ingredients (for 4 people) :
 
   For the choux pastry :


  •   150 g of sifted flour
  •   5 medium eggs 
  •   100 g butter
  •   25 ounces of water
  •   1/2 teaspoon salt

  For the stuffing herring :
  •   1 smoked herring
  •   Fresh goat
  •   A Granny Smith apple
  •   1/2 bunch chives
  •   1 shallot
  •   Black pepper

Directions :
 
1. Prepare profiteroles following the recipe of choux pastry Here.
 
2. Chop the shallots and chop the chives with a knife, add the cheese and mix.
  Peel the apple and cut into small cubes. Stir in the mixture, pepper. If you are preparing seems not  

  smooth enough, you can relax with a little cream or for a longer version of "light", with of low fat yoghurt.

3. Fill the profiteroles with pastry bag or using a teaspoon and drop a cube of smoked herring inside.
