If you don’t want to bother making mayonnaise from scratch, but you want to create the effect
of homemade mayonnaise, work some extra virgin olive oil or other oil into a few tablespoons of bottled mayonnaise. You can even add an egg yolk to give the mayonnaise a homemade color.
MAKES 1 CUP
- ¼ cup bottled mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 egg yolk (optional)
- ¾ cup canola or safflower oil, pure olive oil, extra virgin olive oil, or
- nut oil
- Salt
- Pepper
In a bowl, whisk together the mayonnaise, lemonjuice, mustard, and egg yolk. Whisk in the oil in a
steady stream. If the mayonnaise starts to getthicker than bottled mayonnaise, add 1 to 2
teaspoons water to keep it from breaking. Season with salt and pepper.
