Why A Jamaican Fruit Cake Will Be A Hit At The Next Office Party

By Michael Wagner

There are many continental dishes that are becoming part of the growing food rave that many consumers cannot get enough of. Every week, people tune into cooking and travel shows to check culinary delights from around the world. Many have come to the conclusion that there is no food like that inspired by the Caribbean, as its intense spices can linger on the tongue for hours, especially the oxtails and Jamaican fruit cake.

While spicy food lovers may either be too full or overwhelmed by the heat in their dishes, they may think that there is no room for any kind of dessert. Others may believe that sweets may get lost in the lingering flavor profile because no one wants to consume empty calories. However, a good fruitcake will hold its own against many spicy dishes.

Flan is ideal for those who like caramel or custard. Most recipes serve more than a few people at a time but can be modified into single servings. If the company refrigerator is already packed to capacity, this might not be the ideal dish to bring. Unless kept in a hard storage container, any damage to the custard will kill the presentation.

More people are learning about dishes from the Caribbean and restaurants are beginning to add dishes with an island influence to their menus. It may be a safe bet that jerk chicken is one of the most popular dishes, followed by rice and peas. Side dishes like beef or vegetable patties and fried plantains can also work as entrees.

Although some recipes will use a candied fruit similar to holiday fruit cakes, some people like to soak fresh fruit in rum overnight before adding to batter. Usually, a mix of dried fruits like dates, pineapple, and raisins will give it a dense texture. For a nice variety, some will add fresh or candied cherry halves with lots of walnuts.

Anyone serving this for a potluck at the office should use caution. This goes for whether they are buying from a restaurant or making their own version at home. The reason is that a small amount, perhaps a shot glass full just to taste, is enough for younger people. There are also rum flavored extracts for those who do not consume alcohol at all.

Otherwise, there are some who not only marinate the fruit in rum before baking but will add ample amounts of dark rum to the batter. While very decadent, it can cause anyone to become very lethargic shortly afterward. While some Americanized recipes may call for a rum flavored white icing, this can be enjoyed warm by itself or with a small scoop of vanilla ice cream or gelato.

Serving food that reminds people of a tranquil paradise is always a big hit at social gatherings. It does not necessarily have to be spicy but entrees that have a little kick with a fruity or tangy aftertaste remind most of the island dishes that are becoming popular with many foodies. As with any good meal, there is always room for dessert.
