Pizza for breakfast is good. Damn good. Those who ate pizza sausage were all. Much as I love the sausage, which contains a lot of fat, which does not need. In fact, there were puddles of grease on the surface of the pizza. Can you do something with less fat and lots of flavor? I thought.
First, I used the crust English muffins. Sometimes I buy the apartment and sometimes I buy whole wheat. Do not buy honey buns containing it will not work for this recipe. Instead of whole eggs, I used an egg substitute which is made with egg whites. I often buy several boxes at a time, put one in the fridge and freeze the other.

Ingredients :
- 1 package of English muffins (regular, sourdough or wheat)
- 1 teaspoon butter
- 1/2 cup sliced mushrooms, cooked (about six large)
- 9 oz box chopped ham
- 16 oz egg substitute cardboard
- 2 tablespoons chopped chives
- 15 oz jar light alfredo sauce
- One-half cup shredded Swiss cheese (I use reduced fat Swiss content).
Method :
Preheat oven to 400 degrees. Cupcakes halved with a fork and a set on a sheet of baking flanges. muffins broil until the edges just begin to brown. Remove from oven. Chop the ham and set aside. Spray a nonstick skillet with cooking spray. Melt the butter in a saucepan, add the mushrooms and cook until they begin to brown. Transfer mushrooms in a small bowl and set aside. Pour 1 cup egg substitute, or more, depending on how many pizzas you will, in a small bowl and add the chives. Transfer the egg mixture into the saucepan and cook over medium heat until almost set. Remove from heat and put scrambled eggs in a bowl. Top each muffin half with a spoonful of alfredo sauce, mushrooms, chopped ham, scrambled eggs and Swiss cheese. Bake for about seven minutes or until cheese is sticky and background. Makes 4-6 servings.
