An innovative and very tasty version of the classic tiramisu with the softness of the sponge that supports a light cream, enriched with the intensity of color and flavor berries. Hazelnut brings a final touch of indulgence crisp.
Ingredients (For 6 people) :(To be prepared the day before)
For the sponge :
- 225 g flour
- 8 whole eggs
- 250 g of sugar
- 3 tablespoons of clear- starch potato
- Zest of half a lemon
For the filling of tiramisu :
- 500 g mascarpone
- 12, 5 cl fluid cream
- 8 egg yolks
- 100 g of sugar
- 2 tablespoons of clear- icing sugar
- 500 g of berries: strawberries, strawberries, currants, raspberries
- 5 cl Grand Marnier or Amaretto di Saronno
- 80 g hazelnuts or almonds slightly grilled

Flavor the dough with the finely grated zest of lemon. When cooked and cooled completely, cut the 3 horizontally discs of the same thickness.
3. Prepare the mascarpone cream: whisk the egg yolks with the sugar mixture until the pale yellow in color. Add mascarpone and mix well.Whip the cream very cold. In the last moment, add the icing sugar. Stir gently the egg-sugar mixture and mascarpone.
4. Place on a flat first disc of sponge cake. Sprinkle the a bit of juice produced by red fruits during themaceration. Pour a layer of cream, a quarter of fruit red, cover with sponge and repeat until all the ingredients are ending with a layer of fruit.Refrigerate overnight.Sprinkle the last moment hazelnuts coarsely or chopped almonds.
